Nihon Shokken, producer of soup bases and condiments, does nabe hot pot broth. Hakusai Shio Tonkotsu tsuyu comes in a 750-gram retort package. It's priced at about 300 yen.
The good
Usually, my winter nabe hot pots start with simple dashi, mirin, and soy sauce. This time, I splashed out on a packaged version of nabe hot pot broth. This 750-gram package is Hakusai Shio Tonkotsu Tsuyu. The broth yields nabe hot pot for three to four diners. It's the "straight" type, meaning it doesn't require additional liquid. I deviated a little bit from the suggested ingredients and preparation. The soup is savory, enhanced by Hakata sea salt, and the pork bone broth is very satisfying. I finished the soup with udon.
The not so good
Hakusai Shio Tonkotsu Tsuyu is a convenient prepared version of nabe hot pot broth. Considering that you get three to four servings, it is a reasonably priced item at 300 yen. The product package suggests nabe hot pot ingredients, which I mostly followed. I substituted shiitake for buna shimeiji mushrooms. The earthy flavour works well with the tonkotsu. For the shime, or finish, chukamen, the yellowy Chinese noodles, are recommended. I used what I had on hand, udon noodles. Instead of directly boiling them in the pot, I cooked them separately.
